This Filipino delicacy, popularly called itlog na maalat (salty egg), are cured in a brine solution or mixture of clay and salt for a couple of weeks to give them that salty-flavor, and finally hard boiled. Their shells are often dyed with red food coloring to distinguish them from chicken eggs.
Red eggs are usually paired with steamed rice, slices of tomatoes and salty dried fish.
